Tabbouleh Salad with Quinoa, Parsley, and Tomatoes

Ingredients:

  • 1/2 kg tomatoes

  • 2 bunches of parsley

  • 1/2 cup bio quinoa

  • 1 pinch of salt

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

Instructions:

  1. Boil the quinoa in water for about 15 minutes - it should double in volume and become translucent. Set it aside to cool.

  2. Finely chop the parsley (2 bunches), and dice the tomatoes (1/2 kg) into small cubes.

  3. Place them in a large salad bowl and add the cooked quinoa.

  4. Season the tabbouleh salad with lemon juice (1 tbsp), salt, and olive oil (1 tbsp). Serve cold.
